This is a wonderful and tasty recipe that I discovered many years ago. Our entire family loved it so much and it looked as good as it tasted, that I decided to submit it to our local newspaper. My one claim to fame!
SAVORY RICE PIE WITH HAMBURGER CRUST
1 lb. very lean ground beef
1/2 cup soft bread crumbs
1/4 cup chopped onions
1 teaspoon salt, divided
1/8 teaspoon oregano
1/8 teaspoon pepper
2 - 8 oz. cans tomato sauce, divided
1 1/3 cups instant rice
1 cup water
1 1/2 cups shredded sharp cheddar cheese, divided
Combine the ground beef, crumbs, onion, 1/2 teaspoon salt, oregano, pepper and 1/2 cup of tomato sauce in a bowl and mix well. Pat the mixture firmly over the bottom and sides of a 9 inch glass pie plate. Pinch 1 inch fluting around the edge; set aside.
Combine the rice, water, 1/2 cup cheese, the remaining tomato sauce and 1/2 teaspoon salt in a bowl. Spoon this mixture into the meat shell. Cover with aluminum foil. Bake at 350 degrees for 25 minutes. Remove the foil cover, sprinkle remaining cheese on top and bake 10-15 minutes longer. Cut into wedges.
Combine the ingredients in a bowl, as listed above and mix well with your hands...
After patting the meat mixture into a glass pie dish and mixing the rice mixture, spoon this mixture into the meat shell...
Cover with aluminum foil and bake for 25 minutes. Remove from the oven and spread the remaining shredded cheese on top...
Bake for another 10-15 minutes...

oh my gosh~~ this is in the oven now. I am 98.5 percent sure this is the same recipe my mom used to make. Thank you so much for the wonderful memory, and bringing a tad of nostalgia to my dinner table:)
ReplyDeleteI grew up eating this on a regular basis! I was raised in a family that faced a lot of lean financial times, and my mother was a pro at feeding a family of 7 on a budget for 3. This rice pie was one of her go-to recipes, which she also ate regularly as a child, and learned from my grandmother. I've been making it for my own family for quite some time now, and it tastes like childhood to me.
