Banana Chocolate Chip Muffins, My Gift to You

The other day I found a handwritten recipe for Banana Chocolate Chip Muffins that was written by me.  It sounded so good and I had written "Excellent" on it, which means I had had it once upon a time and really liked it.  I'm thinking it might have come from one of our daughters-in-law.  I ended up making them and they really are excellent.  So here's my Christmas gift to you...



BANANA CHOCOLATE CHIP MUFFINS

2 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup butter
1/2 cup brown sugar
1/4 cup sugar
1 tsp. vanilla extract
2 large eggs
1 1/2 cups smashed ripened bananas
1/2 cup sour cream
1 cup semi-sweet chocolate chips

  1. Preheat over to 400 degrees.  Grease 12 3 x 1 1/2 inch muffin cups. 
  2. Mix first 4 ingredients and set aside.
  3. Cream butter and both sugars.
  4. Add vanilla extract and eggs and beat well.
  5. Mix in the bananas and sour cream.
  6. Use a wooden spoon to add the flour mixture and then the chocolate chips.
The recipe called for it to bake for 20 minutes, but I thought 400 sounded a bit high.  I baked it for 10 minutes at 400 degrees, turned the oven off and left the muffins in the oven for another 10 minutes. 

Even Mr. Cottage enjoyed them!
