Italian Black Beans Appetizer

When I first received this recipe, years ago, black beans were not as common as they are today.  Infact, many black bean recipes today are for southwestern or Mexican dishes.  This one is actually Italian.  It's very basic and easy.  However, one word of warning:  Don't make this at the last minute.  It must be made the day ahead.  I knew I was suppose to do that, but once I was short on time and decided to go ahead and make it anyways.  The flavors never had a chance to mingle...

 

ITALIAN BLACK BEAN APPETIZER

1 15 oz. can black beans, Progresso or Bush's
3 Tablespoons olive oil
1 medium onion, chopped
salt and pepper

Drain and lightly rinse the beans...


Add the olive oil...


And the chopped onions and salt and pepper...




Mix well...


Cover and refrigerate overnight.  Serve with Tortilla chips.  I use Scoops and I usually put a spoon in the bowl for people to use for putting it on their chip...



At last, a healthy appetizer.  Enjoy!
