Dried Cherry Broccoli Salad

This is another recipe I received a number of years ago.  It sat around in my recipe book for quite awhile before I finally decided to try making it.  Ever since, wherever I take this or whoever tries it, loves it and I think you will too, unless you're not a broccoli lover...



DRIED CHERRY BROCCOLI SALAD

1 bunch broccoli, cut into bite-sized pieces
1 red onion, sliced
1 cup chopped pecans
1 cup dried cherries
1 cup mayonnaise
1/4 cup Parmesan cheese
1 Tablespoon sugar
1 Tablespoon cider vinegar
1/2 teaspoon cinnamon

I find if I use my kitchen shears to cut the broccoli, it's so much easier than using a knife...




After you cut them into bite-sized pieces, rinse and then I blanch them very slightly to soften just enough without cooking them.  I usually put them in a microwave dish, with a few spoonfuls of water, cover and microwave on high for 2-3 minutes, maximum.  They should be a lovely green, but still quite raw...


I love the onions, but I find that using a whole onion is a bit much.  I usually use half and then halve that and cut into thin strips...



Add the rest of the dry ingredients to the broccoli...


If you want, you can use dried cranberries, but the dried cherries give it a really great taste.  I usually find mine either in the produce department or where the dried fruits are.  You may have to ask your store where they are...



In a smaller bowl, stir together the mayonnaise, Parmesan cheese, sugar, vinegar and cinnamon...



It's at this point that I cover each bowl and refrigerate until I'm ready to serve it.  Then I simply toss the mayonnaise mixture with the broccoli mixture and let everyone rave about it!
