Now that October is here, I've been making various soups and comfort foods that really hit the spot. This one is so easy and so fast and so good!
Ground Beef Soup with Vegetables
1 lb. ground beef (ground turkey can be substituted)
2 (10 1/2 oz.) cans beef broth (use chicken broth if using turkey)
2 (14 1/2 oz.) cans Italian stewed tomatoes
1 (16 oz.) can mixed vegetables, do not drain
salt and pepper to taste
1 cup uncooked medium egg noodles
1. In a large pot for soup, brown the ground beef and drain the fat from the pot.
2. Add the beef broth, but save one of the empty cans.
3. Fill the empty can twice with water and add to the pot.
4. Add the two cans of Italian stewed tomatoes and the can of mixed vegetables, DO NOT DRAIN!
5. Salt and pepper to taste
6. Bring all to a boil and add the noodles. Cook on low heat for 10 minutes or until noodles are done.
This will serve 6-8. I usually serve with rolls or bread. Yummy and filling!
