This is a continuation from yesterday, of a delicious nut bread that became a tradition in my family. I'm assuming by this point that you've made the filling and have grated the lemon. Put 1 cup of milk in the microwave and heat for 1 minutes, 15 seconds...
Check the temperature. It should be around 105 degrees. If it's too cool, warm up some more; and if it's too hot, let it sit awhile and keep checking...
until the temperature drops to the right degrees...
When the milk is at the correct temperature, put it in a bowl, along with two packages of dry yeast and 1/4 cup of sugar. Stir...
Then I put my bowl into the microwave to rise. Do NOT heat, just let it set until ready to use...
In the meantime, measure out your 19 ounces of flour and put into a large bowl, along with the grated lemon peel and 1/4 cup of sugar...
Measure 7 oz. of butter...
and add to the bowl with the flour...
Mix everything with your hands...
If you haven't already measured 3 1/2 oz of egg yolks, do that now...
Go back and check on your yeast that's been rising. It should look like this...
If it doesn't rise, the milk was not at the correct temperature or the yeast was old and you'll have to do this step again. Once your yeast has risen, add it to the bowl of flour, along with the egg yolks...
Then get into it with your hands and really mix it well...
Put it on a lightly floured board, or marble slab and knead until it's no longer sticky...
Divide the dough into three balls...
To make sure they're of equal sizes, play around on your kitchen scale until they're all the same weight with one another. They should be somewhere around 14 oz. each...
Roll each ball, one at a time, into a 10 x 12 inch rectangle. I use a ruler to help gauge...
Measure out your filling for each one. If your dough measures 14 oz., use half of that weight for the filling, which would be 7 oz. If you use too much filling in the roll, it will be too heavy and won't rise correctly. Spread your filling evenly over the rolled out dough, to the edges...
Roll from the top to the bottom...
And put into an already greased 9 x 13 inch baking pan...
Keep adding until all three rolls are in the pan...
Cover with a folded towel and put into the microwave or somewhere else that's warm, so the dough will rise. If you put it into the microwave, do NOT turn on the power. Just let it sit for about 2 hours...
Then go and see if it's risen...
Take one well beaten egg, and brush onto the tops and to the edges of each roll. Bake at 350 degrees for approximately 40 minutes. After removing from the oven, cover with a damp towel until it's cooled...
And then, enjoy...
I made these in advance and wrapped them well in foil and put into the freezer. They are coming down with us to Florida. If you love to bake, you'll enjoy making these wonderful nut rolls!
