Oven-Roasted Vegetables

This is one of the easiest and most colorful vegetable recipes I have.

OVEN-ROASTED VEGETABLES

Use any of the following vegetables you want:
  • Cauliflower
  • Broccoli
  • Red Pepper,
  • Orange Pepper
  • Yellow Pepper
  • Green Pepper
  • Summer squash
  • Zucchini
  • Asparagus
1 small red onion, sliced
3 tablespoons extra-virgin olive oil
salt and pepper to taste

Cut all the vegetables into bite-size pieces.  Heat the oven to 450 degrees.  Place all the cut vegetables and sliced onion in a large roasting pan.  Toss with the olive oil, salt and pepper and mix to coat well.  Roast for 30-45 minutes, stirring occasionally, until the vegetables are lightly browned and tender.







It taste as good as it looks.  So quick and easy!  I decided to sprinkle Lawry's Lemon-Pepper Seasoning with the one shown above.
