The Best Chocolate Cherry Cake Ever

What do you think of when you hear the words "chocolate cherry cake"?  Probably a chocolate cake that has cherries in it or on it, right?  Well, not this one.  The only chocolate in this cake is from the chocolate chips.  If you like chocolate chips in your cookies, or any other foods that you eat, then I guarantee you'll love this cake...


I really don't know where this recipe came from, other than I got it from my mother many years ago; and I've never seen any recipes like this since.  So here's a really great cake that's easy to make and is very delicious and moist.

CHOCOLATE CHERRY CAKE

2 cups flour
3/4 cup granulated sugar
3/4 cup cooking oil
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon cinnamon
1 21 oz. can cherry pie filling
6 oz. package chocolate chips
1 cup coarsely chopped walnuts

In a large bowl, beat the eggs.  Add the sugar and beat well.  Add oil, vanilla, flour, baking soda and cinnamon.  Mix well.  Stir in the cherry pie filling, chocolate chips and nuts.  Pour into a greased bundt pan.
Bake at 350 degrees for 1 hour.

So just start with the eggs and beat with a whisk or a fork...


Add the sugar and beat well.  I just use a wooden spoon...


Add the vanilla, flour, baking soda and cinnamon...


And mix well...


Add the cherry pie filling...


Stir to mix it in...


Add the chocolate chips and the walnuts.  To save time, I bought the package that had the nuts already coarsely chopped...


Pour into a well greased bundt pan.  I also floured mine...

When it's finished baking, loosen the edges of the cake with a thin spatula or flexible knife and remove the cake from the pan.  After it cools, you can sprinkle the cake with powered sugar, if you desire.



One more thing that I usually do is to cut and wrap the sliced cake pieces individually in aluminum foil and freeze them.  It's just Mr. Cottage and I in the house now and every now and then I want to make this cake for us.  All I have to do is reach in the freezer and set it out on the counter to thaw.  It taste like it was just freshly baked.  I label it with "CCC" to indicate what's in it...
